While being a functioning adult should theoretically entail some sort of grasp on how to feed yourself within the comfort of your own home, lately my bank account has been giving the Whole Foods salad bar a lot more loving than I would prefer. Not that Whole Foods isn’t a beacon of all hope in a listless world, but at some point it’s time to buckle down and make yourself a meal! Luckily for all my lazy, kindred spirits, one-pot meals are a novelty that other people have already explored, so there are recipes-a-plenty! I may not know how to broil or sauté three different dishes simultaneously, but I can hypothetically handle throwing things together and only worrying about one dish at a time. Here are some recipes to ignite that lazy cooking flame that I know probably sits dormant in all of you. Sit back, relax, and let that one pot of yours do all the work. Try these and tag #RCROnePotMeals so we can see your creations!
